Chicken and Garlic

Ingredients

  • 1 lb. egg noodles
  • 1 pkg. boneless chicken breasts (2 1/2 lbs.)
  • salt
  • 2 tbsp. olive oil
  • 4-6 garlic cloves
  • 2 tsp. finely chopped parsley
  • 1 tsp. finely chopped fresh marjoram (or a pinch of dried marjoram)
  • 1/2 c. parmesan cheese
  • 2 tbsp. softened margarine
  • chopped parsley (garnish)

Step by step

  • Cook egg noodles.
  • Cut chicken into strips 1/4 to 1/3" thick and salt lightly.
  • Sauté the chicken in oil over high heat for 1-2 minutes until they are firm and springy, and all surfaces are opaque.
  • Add the garlic and herbs and cook for one minute longer on high heat, stirring and tossing constantly.
  • Add noodles and toss thoroughly.
  • Remove from heat.
  • Add cheese and margarine and toss.
  • Serve immediately with chopped parsley as garnish.
