Coconut Macaroons

Ingredients
- 2 egg whites
- 1/2 tsp. vanilla
- 1/8 tsp. cream of tartar
- 2/3 c. sugar
- 1 1/3 c. flaked coconut
Step by step
- Preheat oven to 325°F.
- Beat egg whites, vanilla and cream of tartar until soft peaks form (tips curl).
- Gradually add sugar, beating until stiff peaks form (tips stand straight).
- Fold in coconut.
- Drop by rounded teaspoons 2 inches apart on a greased cookie sheet.
- Bake about 20 minutes or until edges are lightly browned.
- Cool on wire rack.
- Yields 30 cookies.
