Coconut Macaroons

Ingredients

  • 2 egg whites
  • 1/2 tsp. vanilla
  • 1/8 tsp. cream of tartar
  • 2/3 c. sugar
  • 1 1/3 c. flaked coconut

Step by step

  • Preheat oven to 325°F.
  • Beat egg whites, vanilla and cream of tartar until soft peaks form (tips curl).
  • Gradually add sugar, beating until stiff peaks form (tips stand straight).
  • Fold in coconut.
  • Drop by rounded teaspoons 2 inches apart on a greased cookie sheet.
  • Bake about 20 minutes or until edges are lightly browned.
  • Cool on wire rack.
  • Yields 30 cookies.
