Herb Roasted Potatoes

Ingredients

  • 1/3 c. Grey Poupon mustard
  • 2 tbsp. olive oil
  • 1 clove garlic, chopped
  • 1/2 tsp. Italian seasoning
  • 6 medium red potatoes, chunked (approx. 2 lbs.)

Step by step

  • Preheat oven to 425°F.
  • Mix all ingredients except potatoes in small bowl.
  • Place potatoes in lightly greased baking pan.
  • Toss with mustard mixture.
  • Bake for 35-40 minutes or until potatoes are fork-tender, stirring occasionally.
  • Makes 4 servings.
