Herb Roasted Potatoes
Ingredients
- 1/3 c. Grey Poupon mustard
- 2 tbsp. olive oil
- 1 clove garlic, chopped
- 1/2 tsp. Italian seasoning
- 6 medium red potatoes, chunked (approx. 2 lbs.)
Step by step
- Preheat oven to 425°F.
- Mix all ingredients except potatoes in small bowl.
- Place potatoes in lightly greased baking pan.
- Toss with mustard mixture.
- Bake for 35-40 minutes or until potatoes are fork-tender, stirring occasionally.
- Makes 4 servings.
