Humantashens are a traditional Jewish cookie enjoyed during the celebration of Purim.

Ingredients

  • 3 eggs
  • 1 c. sugar
  • 3/4 c. oil
  • 1/4 c. orange juice
  • 2 tsp. baking powder
  • 4 c. flour
  • assorted pie fillings or preserves

Step by step

  • Preheat oven to 350°F.
  • Mix eggs in a large bowl.
  • Add sugar and mix.
  • Add oil and orange juice; mix well.
  • Combine flour and baking powder. Add to bowl and mix well.
  • Refrigerate dough for 3 hours. (If you're in a hurry, freeze for 30-60 minutes.)
  • When chilled, roll dough between wax paper until it's about 1/8" thick.
  • Using a floured glass or round cookie cutter, cut out circles in the dough.
  • Fill with a small amount of filling (less if using preserves) and fold into triangle shape, leaving center of cookie open to show filling.
  • Bake for about 20 minutes or until lightly browned.
