Humantashens are a traditional Jewish cookie enjoyed during the celebration of Purim.
Ingredients
- 3 eggs
- 1 c. sugar
- 3/4 c. oil
- 1/4 c. orange juice
- 2 tsp. baking powder
- 4 c. flour
- assorted pie fillings or preserves
Step by step
- Preheat oven to 350°F.
- Mix eggs in a large bowl.
- Add sugar and mix.
- Add oil and orange juice; mix well.
- Combine flour and baking powder. Add to bowl and mix well.
- Refrigerate dough for 3 hours. (If you're in a hurry, freeze for 30-60 minutes.)
- When chilled, roll dough between wax paper until it's about 1/8" thick.
- Using a floured glass or round cookie cutter, cut out circles in the dough.
- Fill with a small amount of filling (less if using preserves) and fold into triangle shape, leaving center of cookie open to show filling.
- Bake for about 20 minutes or until lightly browned.
