Mango, Jicama and Corn Salad

Ingredients

  • 1 16 oz. bag frozen corn
  • 6 small mangoes, peeled, pitted and coarsely chopped (or two 12-16 oz. bags frozen mango chunks, if you're lucky enough to find them)
  • 1 c. chopped red onion
  • 2 lbs. peeled, coarsely chopped jicama
  • 1/2 c. fresh cilantro
  • 1/2 c. fresh lime juice

Step by step

  • Thaw corn and toss all ingredients together up to 4-6 hours before serving; refrigerate.
