Mango, Jicama and Corn Salad

Ingredients
- 1 16 oz. bag frozen corn
- 6 small mangoes, peeled, pitted and coarsely chopped (or two 12-16 oz. bags frozen mango chunks, if you're lucky enough to find them)
- 1 c. chopped red onion
- 2 lbs. peeled, coarsely chopped jicama
- 1/2 c. fresh cilantro
- 1/2 c. fresh lime juice
Step by step
- Thaw corn and toss all ingredients together up to 4-6 hours before serving; refrigerate.
