Pasta with Sausage and Peppers

Ingredients

  • 1 1/4 pounds hot or sweet Italian link sausage
  • 1 cup red wine
  • 1/2 teaspoon salt
  • 1 package (12 oz.) Ronzoni Tri-Color Rotini, uncooked
  • 2 large red peppers, cut into strips
  • 1 large onion, chopped
  • 1/4 cup olive oil
  • 3 garlic cloves, minced
  • 1/4 cup chopped parsley
  • 1 teaspoon dried basil
  • 1/2 cup grated Parmesean cheese

Step by step

  • Remove and discard sausage casings.
  • Cook and stir sausage in skillet over meduim heat until well cooked.
  • Drain fat.
  • Stir in wine and salt.
  • Cook about 10 minutes longer, stirring occasionally.
  • Remove sausage mixture from skillet and set aside.
  • Prepare pasta as directed on package.
  • Drain pasta.
  • Cook and stir peppers and onion in hot oil until crisp-tender.
  • Add garlic and cook 30 seconds longer.
  • Return sausage to skillet.
  • Add parsley and basil.
  • Heat thouroughly.
  • Toss sausage mixture with pasta and cheese.
  • Makes 6 servings.
