Potato and Herb Bake
Ingredients
- 6 tbsp. margarine, melted
- 1/3 c. finely chopped onion
- 1/2 tsp. salt
- 1/4 tsp. crushed, dried basil leaves
- 1/4 tsp. crushed, dried thyme leaves, if desired
- 1/4 tsp. ground black pepper
- 2 lbs. potatoes, peeled and very thinly sliced
Step by step
- Preheat oven to 425°F.
- In casserole, add 2 tbsp. margarine.
- In small bowl, combine remaining margarine, onion, salt, basil, thyme and pepper.
- Arrange 1/3 potatoes in casserole in a circular pattern, and spoon 1/3 of mixture over potatoes.
- Repeat twice.
- Cover and bake 20 minutes.
- Remove cover and bake an additional 30 minutes or until tender.
- Let stand 10 minutes before serving.
- Makes 6 servings.
