Potato and Herb Bake

Ingredients

  • 6 tbsp. margarine, melted
  • 1/3 c. finely chopped onion
  • 1/2 tsp. salt
  • 1/4 tsp. crushed, dried basil leaves
  • 1/4 tsp. crushed, dried thyme leaves, if desired
  • 1/4 tsp. ground black pepper
  • 2 lbs. potatoes, peeled and very thinly sliced

Step by step

  • Preheat oven to 425°F.
  • In casserole, add 2 tbsp. margarine.
  • In small bowl, combine remaining margarine, onion, salt, basil, thyme and pepper.
  • Arrange 1/3 potatoes in casserole in a circular pattern, and spoon 1/3 of mixture over potatoes.
  • Repeat twice.
  • Cover and bake 20 minutes.
  • Remove cover and bake an additional 30 minutes or until tender.
  • Let stand 10 minutes before serving.
  • Makes 6 servings.
