Pumpkin cookies

Ingredients
- 4 c. flour
- 2 c. quick or old-fashioned oats
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 1 tsp. salt
- 1 1/2 c. margarine, softened
- 2 c. firmly packed sugar
- 1 egg
- 1 tsp. vanilla
- 16 oz. solidly packed pumpkin
- 1 c. semi-sweet chocolate chips
Step by step
- Preheat oven to 350°F.
- Combine flour, oats, baking soda, cinnamon and salt, set aside.
- Cream margarine, gradually adding sugar, beating until light and fluffy.
- Add egg and vanilla; mix well.
- Alternate additions of dry ingredients and pumpkin, mixing well.
- Stir in chips.
- Drop onto lightly greased cookie sheet.
- Bake 20-25 minutes.
