Sicilian Sausage Soup
Ingredients
- 1/2 lb. bulk sweet Italian sausage (remove from casings)
- 1 c. onion, chopped
- 1 can (2 lbs. 3 oz.) Italian tomatoes (crushed or diced is also fine)
- 2 cans (13 3/4 oz. each) chicken broth (3 1/2 c.)
- 1 tsp. basil
- 1/2 c. orzo
- 1/4 tsp. salt
- 1/8 tsp. pepper
Step by step
- Cook sausage in saucepan.
- Sauté onions in pan until soft.
- Add tomatoes, broth and basil.
- Bring to boil.
- Stir in orzo, salt and pepper.
- Lower heat.
- Simmer 20 minutes or until orzo is tender.
- Serve.
