Three Bean salad

Ingredients

  • 1 can garbanzo beans
  • 1 can black beans
  • 1 can light red kidney beans
  • 1-2 ts. crushed garlic, to taste
  • bunch fresh herbs, chopped fine (perhaps parsley and savory, but just about anything will work)
  • salt and pepper, to taste
  • 1/4 c. red wine vinegar
  • 1/8 c. olive oil

Step by step

  • Toss ingredients together a day in advance.
  • Cover and refrigerate overnight for best flavor, stirring occasionally.
