Veggie Chili

Ingredients

  • 2 large cans crushed or pureed tomatoes
  • 16 oz. tomato sauce
  • 1 can kidney beans (rinsed)
  • 1 can black beans (rinsed)
  • 1 eggplant (diced)
  • 2 zucchini (diced)
  • 2 small bags baby carrots (diced)
  • 2 green peppers (diced)
  • 2 cups diced celery
  • 2 medium onions (diced)
  • 2 pounds ground beef / turkey / soy meat product
  • 3 packages chili seasoning
  • 1 package light tofu (cubed)

Step by step

  • Stir fry veggies and meat separately.
  • Add sauce.
  • Simmer 1 1/2 - 4 hours.
