Veggie Chili
Ingredients
- 2 large cans crushed or pureed tomatoes
- 16 oz. tomato sauce
- 1 can kidney beans (rinsed)
- 1 can black beans (rinsed)
- 1 eggplant (diced)
- 2 zucchini (diced)
- 2 small bags baby carrots (diced)
- 2 green peppers (diced)
- 2 cups diced celery
- 2 medium onions (diced)
- 2 pounds ground beef / turkey / soy meat product
- 3 packages chili seasoning
- 1 package light tofu (cubed)
Step by step
- Stir fry veggies and meat separately.
- Add sauce.
- Simmer 1 1/2 - 4 hours.
